In soil, the soil itself is a buffer and a pantry — it holds trace elements, releases them slowly, and resists sudden pH swings. Hydroponics removes all of that. Everything the plant eats has to be in the water you mix, in the right proportions, at a pH where the roots can actually absorb it. That is why hydroponic nutrients are a different product from plant food, not a fancier one.

Why pH is the whole game
Nutrients dissolved in water are only available to a plant within a fairly narrow pH band. Outside it they are still in the reservoir, but chemically bound in forms roots cannot take up — a condition called lockout, and it looks exactly like a deficiency.
So people see yellowing leaves, add more feed, and make it worse: more nutrient at the wrong pH is still unavailable, and the extra salts push the solution further off.
For most hydroponic crops the target is roughly 5.5 to 6.5. Iron and manganese struggle above that; calcium and magnesium struggle below.
This is why a pH meter is not optional. A cheap digital meter and a bottle of pH-down cost very little next to the nutrients, and without them you are adjusting a system you cannot measure.
Check after mixing, and check again a day later — feed changes pH as plants drink.
One-part, two-part, three-part
One-part is a single bottle or powder you dilute. Simplest, fewest mistakes, and perfectly good for leafy greens and herbs, which do not need their diet changed much.
Two- and three-part systems split the nutrients across bottles so you can change the ratio through the plant's life — more nitrogen while it is growing leaves, more phosphorus and potassium when it flowers or fruits. They also keep certain elements apart in concentrate, because calcium and some phosphates precipitate into an unusable sludge if mixed undiluted.
That last point is the one beginners trip on: never mix concentrates together. Add each to the water separately, stirring between.
If you are growing lettuce and herbs, one-part is genuinely fine. If you want tomatoes, peppers or anything that fruits, a multi-part system will do noticeably better.

Adding one concentrate straight into another makes calcium and phosphate compounds precipitate into a sludge the plants cannot use, and you will have wasted both. Every label states a full-strength dose. Start well below it — half is a sensible figure — and increase only if the plants ask for it.
Underfeeding shows as slow, pale growth and is corrected within days by adding more. Nutrient burn — the brown, crisping leaf tips of overfeeding — is not correctable in the same way; the affected tissue does not recover, and fixing it means flushing the reservoir and starting the solution again.
Seedlings and cuttings in particular want very dilute feed, often a quarter strength, because they have little root mass to cope with a concentrated solution.
The asymmetry is the point: one mistake is a few slow days, the other is damaged plants and a wasted reservoir.
