Why the pot changes the colour

The reason is the mordants and assists, not the plants. Alum is relatively benign, but the traditional palette includes iron, copper, tin and historically chrome, and several of those are genuinely toxic and accumulate. Residues persist in scratches and in the pot's surface.

Some dyestuffs matter too. Plenty of dye plants are not food — pokeweed, walnut hulls, some barks and lichens — and a few are actively poisonous.

So: buy a pot for dyeing, mark it permanently, and store it apart from kitchen cookware. The same goes for spoons, tongs, sieves, thermometers and buckets.
